Substitutions for the coconut butter or coconut cream are:
1 cup Sweet Whipped Cashew Crème
1/2 cup fresh coconut meat
1/2 cup raw cashews, soaked in water for 2 – 8 hours then drained and rinsed
1/4 cup mashed avocado
Ingredients:
- 2 – 3 pure green tea bags or 2 – 3 tsp bulk pure green tea
- 2 – 3 tsp matcha green tea powder
- 1 cup coconut water or water
- 1 cup warm water
- 1/2 cup coconut butter or coconut cream
- 1/4 – 1/3 cup fresh mint leaves or few drops mint essential oil or peppermint extract
- 1 tsp vanilla or vanilla-flavored stevia to taste (optional)
- 2 – 3 Tbsp sucanat or raw sugar or other light sweetener to taste
- few ice cubes for each serving glass
Directions
- Add half the warm water to a bowl and whisk in the matcha powder. Set aside.
- Steep the tea bags in the other other half cup of warm water for at least 15 minutes (depending on how strong you want it).
- Remove the green tea bags or bulk tea and add tea to a blender. Squeeze out any excess moisture from the tea bags into the blender.
- Add the match tea and remaining ingredients except ice cubes to the blender.
- Blend until very smooth and frothy. This may take a minute or two.
- Add ice cubes to glasses and pour latte into each glass.
- Serve and enjoy.
