Ingredients (8 snack servings)
- 1 cup (120g) raw pistachio nuts
- 1 cup (100g) raw cashew nuts
- 1/2 cup (40g) coconut flakes (not desiccated)
- 1/2 cup (50g) raw pecans
- 1 cup (100g) raw macadamia nuts
- 1 egg white
- 1 -2 tbsp matcha green tea powder
- 1/4 cup (60g) powdered stevia
- 1/4 cup (55g) coconut oil
- 1 – 2 tsp vanilla extract
Instructions
- Preheat oven to 250F (120C).
- Add nuts to your food processor along with coconut flakes and pulse 5 – 8 times; you just want them coarsely chopped with a few whole nuts remaining, a nice mix of larger chunks and some more finely ground.
- Whisk together melted coconut oil with powdered stevia, matcha powder, egg white, and vanilla.
- Pour over nut mix and mix everything together really well until all the pieces are well coated; made much easier to decipher thanks to its green colour!
- Place on a baking paper lined tray and bake for 15 minutes. Remove and toss, bake for 15 minutes more. Allow to cool on the tray. DON’T TOSS to ensure some clumping!
Once cooled store in a seal tight container or jar for up to 3 weeks; an empty coconut oil jar works a treat!
