Ingredients
FOR THE CRUST AND THE DECORATION STRIPS:
- 5 large eggs
- 2 tablespoons sugar or sugar substitute of choice
- 1 tablespoon psyllium husks powder
- 1/2 teaspoon baking powder
FOR THE FILLING:
- 1 large egg yolk
- 2 large egg whites
- 4 ounces cream cheese
- 1/2 teaspoon cream of tartar
- 2 tablespoons sugar or sugar substitute of choice
- 1 tablespoon Matcha green tea powder
- 1/8 teaspoon stevia extract
- 1/2 teaspoon vanilla bean seeds
- 1/2 teaspoon vanilla extract
- 1 tablespoon powdered sugar
FOR THE BUTTER TOPPING:
- 1 large egg yolk
- 3 tablespoons butter
- 1/2 teaspoon Matcha green tea powder
- 2 tablespoons powdered sugar
Directions
FOR THE CRUST:
- Preheat your oven to 360°F.
- Butter an 8” round baking pan.
- Butter another, smaller baking pan.
- Mix together the 5 eggs, psyllium husks, sugar or sugar substitute, and baking powder.
- Pour about 3/4 of the mixture into the round baking pan that you buttered. This will make the pie crust.
- Pour the rest of the mixture into the smaller buttered pan. This will make the decoration strips.
- Bake for 10 minutes or until a toothpick comes out clean.
- Allow to cool, keeping the crust in the pans.
FOR THE FILLING:
- In a medium mixing bowl, mix together cream cheese, the egg yolk, sugar or sugar substitute, stevia extract, matcha powder, and vanilla bean seeds, and vanilla extract.
- Separate the whites from the yolks of 2 eggs.
- In a mixing bowl, beat the egg whites. When they get fluffy, add in the cream of tartar and the powdered sugar.
- Beat this mixture until stiff peaks form.
- Using a spatula, carefully fold the egg white mixture into the cream cheese mixture. This mixture should remain airy.
- Pour this filling into the cooled-down pie crust.
FOR BUTTER TOPPING:
- Mix together the egg yolk, butter, matcha powder, and powdered sugar.
TO ASSEMBLE:
- Take your smaller batch of “crust” and cut it into thin strips.
- Make a criss-cross pattern on top of the pie with the strips.
- Spoon your butter topping on top of the pie in dollops, between the criss-cross pattern. *Note: You can also heat up the butter topping a little, making it runnier, and then simply pour it over the top of the pie. Either way works.
- Bake at 360°F for 20 minutes.
- Allow the pie cool down, serve, and enjoy! Leftovers should be stored in the refrigerator in an airtight container.
