INGREDIENTS
Healthy Chocolate Cookie Ingredients
- ¾ cup coconut sugar
- ½ cup Earth Balance (sub butter or any buttery spread)
- 1 egg
- 1½ cups all purpose flour (can sub gluten-free all purpose flour)
- ½ cup cacao powder
Cream Filling Ingredients
- ½ cup light cream cheese
- 2 tablespoons coconut milk
- 2 tablespoons honey (sub agave or coconut nectar)
Green Tea Ice Cream Ingredients
- 3 frozen bananas
- 3 tablespoons coconut milk
- 3-4 tablespoons matcha powder (depending on how strong you want the taste)
- 2 tablespoons honey (sub agave or coconut nectar to make vegan)
Optional Toppings
- honey drizzle
- whipped cream
- cool whip
- toasted nuts
INSTRUCTIONS
- In a medium sized bowl, cream together your coconut sugar and Earth Balance.
- Add in your egg, flour, and cacao powder. Mix until it makes a nice, crumbly batter.
- Use your hands to form the batter into a ball, cover, and refrigerate for 45 – 60 min.
- While the batter is chilling, blend together your green tea ice cream ingredients in a blender or food processor until very smooth.
- Transfer the ice cream to a container, cover and allow it to chill in the freezer until you are ready to serve.
- Preheat your oven to 350.
- Once the batter is done cooling, transfer it to a greased sheet of parchment or wax paper and roll it out thin and flat. (The thinner you roll them, the crispier it is.)
- Use a cookie cutter or a cup or even a jar lid to cut out desired cookie shape.
- Transfer your cut cookies to a greased baking sheet. Bake for 10-12 minutes.
- Allow to completely cool on baking tray.
- While the cookies are cooling, blend together your cream filling ingredients in a blender or just with a whisk.
- Once it is well combined and smooth, allow it to chill in the refrigerator for 20ish minutes.
- When you are ready to assemble, scoop out your green tea ice cream into a bowl, spread cream filling in between two chocolate cookies, sandwich them together, and top your sundae with the cookies and optional honey drizzle. (Or even whipped cream.)
