Chocolate Chia Pudding

- 1 cup Blue Diamond Almond Breeze Unsweetened Vanilla Almondmilk
- 3 tablespoons chia seeds
- 2 tablespoons unsweetened cocoa powder
- 3 tablespoons maple syrup or agave
- 1/2 teaspoon vanilla extract
- Chopped dark chocolate or dairy-free chocolate for topping (optional)
Matcha Chia Pudding
- 1 cup Blue Diamond Almond Breeze Unsweetened Vanilla
- 3 tablespoons chia seeds
- 3 tablespoons maple syrup or agave
- 1 teaspoon matcha powder
- 1/2 teaspoon vanilla extract
Instructions
Chocolate Chia Pudding

- In a large bowl whisk together the cocoa powder and chia seeds.
- Slowly pour in the almond milk whisking the entire time to prevent clumps from forming.
- Whisk in the maple or agave syrup and vanilla extract.
- Cover with plastic wrap and refrigerate overnight.
Matcha Chia Pudding

- In a large bowl whisk together the matcha powder and chia seeds.
- Slowly pour in the almond milk whisking the entire time to prevent clumps from forming.
- Whisk in the maple or agave syrup and vanilla extract.
- Cover with plastic wrap and refrigerate overnight.
Assembling
- Spoon equal amounts of the chocolate chia pudding into 4 glasses or jars.
- Top with equal amounts of the matcha chia pudding.
- Repeat with more layers until all of the pudding is used.
- Top with chopped dark chocolate or dairy-free chocolate if desired.
- Serve immediately or cover and store in the fridge to eat throughout the week (they should keep for approximately 4-5 days).
